Recipe // Apple Crumb Bars

The oat-crumb topping makes these apple bars totally unique and delicious!

Last week I shared an apple-licious recipe for Apple Spice Oatmeal Cookies and this week I am continuing the apple trend with this decadent recipe for Apple Crumb Bars. This recipe is made with a pretty basic crumb bar crust but I used whole wheat flour along with the all-purpose because I personally love the flavor it brings to dishes and it pairs wonderfully with apples. It also helps to balance the sweetness of the rest of the dish. This is a great recipe for a crowd, you make it in a 9x13" pan and you can cut the bars into any size depending on how many people you are feeding. I recommend serving this at room temp or even warming them up in the oven at a low temperature before serving because straight of the fridge, they can be a little hard to eat.

1 1/2 cups all-purpose flour

1/2 cup whole-wheat flour

1 tsp baking powder

1/2 tsp salt

5 Tbsp butter, softened

3/4 cup brown sugar

1 egg


1 1/4 cup cold butter, cubed

1 1/2 cup brown sugar

1 1/2 cup all-purpose flour

1 1/2 cup old fashioned rolled oats

1 tsp cinnamon

1/2 tsp nutmeg

1/2 tsp salt


4 gala apples, peeled, cored, and sliced

2 Tbsp butter

1/2 cup granulated sugar

1/2 cup brown sugar

1 Tbsp lemon juice

2 Tbsp cornstarch

2 cups water

1/2 tsp vanilla

1 tsp cinnamon

1/4 tsp nutmeg


1. Preheat oven to 350° and line a 9x13" baking pan with parchment paper or foil and spray lightly with nonstick cooking spray.


 Make the crust.

 Cream together butter and sugars until light and fluffy. Mix in egg. Set aside.

3. In another bowl, mix together flours, baking powder, and salt. Add dry ingredients to wet until just combined. Press the mixture evenly into the bottom of the prepared pan. When you pour the mixture into the pan, it will look crumbly. Once you start pressing it into the pan it will come and stay together. Set aside.


Make the topping.

 In a large bowl, mix together all topping ingredients except for butter. Use a pastry blender to cut blender into dry mixture until mixture crumbles together.


Make the filling.

 Spread the sliced apples evenly over prepared crust.

6. In a small saucepan combine butter, sugars, lemon juice, cornstarch, water, vanilla, cinnamon, and nutmeg. Bring mixture to a boil. Cook and whisk for 2 minutes or until thick and bubbly. Pour mixture over apples in pan. Spread crumb topping evenly on top.

7. Bake in preheated oven until topping is golden brown, 35-45 minutes, rotating pan halfway through baking to ensure even baking. Let bars cool completely before cutting. Serve at room temp or warmed up at a low temperature in the oven.
