Recipe: Pumpkin Sugar Cookies


It's fall everybody. Time to face facts and admit that fall has officially come. For all of you cold weather haters, like myself, it can be a hard time of the year. So to help you slowly ease into the season of cold weather and warm, comfortable foods I have a recipe for Pumpkin Sugar Cookies, just for you. These cooks are soft, light 'n fluffy, sweet, but still has that cozy taste of pumpkin in there. I hope you enjoy these as much as we did....we ate all of them, just the two of us, in about four days. I may or may not have eaten the majority of them. But we'll never know for sure. These are my new favorite fall-time cookies and I'm sure that they'll be your favorite as well!


Recipe For: Pumpkin Sugar Cookies          Yields:

48 cookies

Cookie Ingredients:

1/2 cup butter

1/2 cup vegetable oil

1/2 cup pumpkin

1 cup sugar

1/2 cup powdered sugar

1/2 tsp vanilla

2 large eggs

4 cups all-purpose flour

1/4 tsp baking soda

1/4 tsp cream of tartar

1/2 tsp pumpkin pie spice

Glaze Ingredients:

2 cups powdered sugar

1/2 tsp brown sugar

4 Tbsp water

1 tsp pumpkin

dash nutmeg

dash cinnamon


1. Preheat oven to 350 degrees. Line baking sheets with parchment paper.

2. In a large bowl, stir butter, oil, pumpkin, sugars, vanilla, and eggs together until smooth. Slowly mix in all dry ingredients until completely incorporated.

3. Scoop batter onto prepared baking sheet and flatten to half inch thick. Bake 8-9 minutes.

4. While cookies bake, mix together glaze ingredients in a small bowl. Once cookies are thoroughly baked and cool to the touch, drizzle glaze over cookies.
