Recipe: Not Your Ordinary Veggie Pizza

Let me just tell you how much Seth and I love pizza. A lot. Like a lot a lot. Seth requests it for dinner at least once a week and I caved the other night and came up with this amazing version of veggie pizza.

You know when you get veggie pizza from the pizza shop and it's just greasy and the veggies taste like they aren't fresh? Yeah, well this pizza ain't like this. It's full of super unique ingredients but is still super easy to make. Ah talking about it is making me want it right now. 

Feel free to add even more veggies to your version of the Not So Ordinary Veggie Pizza. And make sure you share your changes with me, I would love to try them as well! Oh, and I used our pizza stone to cook the pizza on. If you are cooking with a stone be sure to preheat it as you preheat the oven AND if you are using frozen dough like I did for this recipe, you can thaw it on the pizza stone as everything preheats. Or you can use a baking sheet if you don't have a pizza stone. But like I said, we love pizza so a pizza stone was the very first thing on our wedding registry.

Recipe for: Not Your Ordinary Veggie Pizza          Yield: 1 pizza

Prep Time: 5 minutes          Cook Time: 6 minutes          Total Time: 11 minutes


1 pizza crust

4 ounces goat cheese chev

1 12oz can tomato paste

1/2 tsp garlic salt

1/2 tsp oregano

2 diced sweet peppers

2+ Tbsp frozen corn kernals

small handful fresh spinach

1 slice tomato, diced

1/4 Tbsp freshly minced garlic

1 Tbsp diced green onion

1+ Cup shredded cheese

(I prefer a mix of cheeses. I used mozzarella and sharp cheddar)


1. Preheat oven to 425 degrees. 

2. In a small bowl mix together the goat cheese chev, tomato paste, garlic salt, and oregano. Stir well until completely combined. Spread a thick layer onto the pizza crust (leaving about half an inch to an inch at the edge to create a crust). 

3. Spread the toppings evenly over the yummy sauce. 

4. Bake for 6 minutes or until cheese is melted and bubbly.
